Crispy Homemade Chicken Egg Rolls
Ingredients
1. Prepare 12 egg roll wrappers. Keep them covered while working so they stay flexible.
2. Use 1 pound of ground chicken for the filling.
3. Measure 3 cups of finely shredded green cabbage. Cut any thick pieces into smaller strips.
4. Add 1 cup of shredded carrots for sweetness and color.
5. Thinly slice 3 green onions, using both the white and green parts.
6. Mince 2 garlic cloves and grate enough fresh ginger to make 1 teaspoon.
7. Measure 2 tablespoons of low-sodium soy sauce, 1 teaspoon of toasted sesame oil, and ¼ teaspoon of black pepper.
8. You’ll also need 1 tablespoon of vegetable oil for the filling and enough neutral frying oil to reach about 2 inches deep in your pot.
9. Mix 1 tablespoon of cornstarch with 2 tablespoons of water for sealing. Optional dipping sauces include sweet chili sauce or soy sauce.
Instructions
10. Heat the tablespoon of vegetable oil in a large skillet over medium-high heat.
11. Add the ground chicken and break it into small crumbles with a spatula.
12. Cook until the chicken reaches 165°F (74°C), stirring occasionally so it cooks evenly.
13. Stir in the garlic and ginger. Cook for approximately 30 seconds, until fragrant.
14. Add the shredded cabbage and carrots. Toss them through the chicken.
15. Cook for 4–6 minutes, until the vegetables soften and excess moisture evaporates.
16. Stir in the green onions, soy sauce, sesame oil, and black pepper. Cook for another minute.
17. Spread the filling on a large plate or baking sheet to cool. Drain any remaining liquid before wrapping.
18. Place one wrapper on a clean surface with a corner pointing toward you. Cover the remaining wrappers with a slightly damp towel.
19. Spoon approximately ¼ cup of cooled filling across the lower third of the wrapper, leaving space along the edges.
20. Fold the bottom corner over the filling, then fold both side corners inward.
21. Roll snugly toward the top corner without pulling hard enough to tear the wrapper.
22. Brush the final corner with the cornstarch mixture and press to seal. Repeat with the remaining filling and wrappers.
23. Heat about 2 inches of oil in a deep, heavy pot to 350°F (175°C). Leave plenty of empty space above the oil.
24. Fry a few egg rolls at a time for 3–5 minutes, turning occasionally, until golden and crisp. Let the oil return to temperature between batches.
25. Transfer the cooked egg rolls to a wire rack over a baking sheet. Serve warm with dipping sauce.
Variation
26. For baked egg rolls, brush all sides lightly with oil. Bake at 425°F (220°C) for approximately 18–25 minutes, turning halfway through.
27. For an air fryer version, brush lightly with oil and arrange in a single layer. Air fry at 375°F (190°C) for approximately 10–14 minutes, turning halfway.
28. For spicy chicken egg rolls, stir 1–2 teaspoons of sriracha into the cooked filling before cooling.
29. For a mushroom version, add ½ cup of finely chopped mushrooms with the cabbage. Cook until their moisture evaporates.
30. For a vegetarian variation, replace the chicken with crumbled firm tofu. Press the tofu first and cook the filling until relatively dry.
Storage
31. Refrigerate cooked egg rolls within two hours. Store in an airtight container for 3–4 days.
32. Reheat refrigerated egg rolls in a 375°F (190°C) oven or air fryer until crisp and heated throughout to 165°F (74°C).
33. To freeze uncooked egg rolls, use cooled, fully cooked filling. Arrange the wrapped rolls separately on a lined tray and freeze until firm.
34. Transfer the frozen rolls to a freezer bag or airtight container. Label and use within 2–3 months for the best quality.
35. Cook frozen rolls without thawing. Brush with oil and bake at 400°F (200°C) for approximately 20–30 minutes, turning halfway, until crisp and the filling reaches 165°F (74°C).
