Custard Cake

Magic Custard Cake

Magic Custard Cake is one of those desserts that looks far more complicated than it really is. With one simple batter, this cake magically separates into three delicious layers while it bakes.

The top becomes lightly golden and delicate, the middle develops a rich custard texture, and the bottom forms a soft, slightly denser cake layer. Every bite offers a different texture.

This recipe is perfect when you want an elegant homemade dessert without preparing multiple separate components. The ingredients are simple, affordable, and easy to find.

The secret to the cake is the thin batter and the separated eggs. During baking, the ingredients naturally settle into different layers, creating the signature appearance.

To begin, preheat your oven to 325°F (160°C). Grease an 8-inch square baking dish and line the bottom with parchment paper for easier removal.

Melt ½ cup (115 g) of unsalted butter and let it cool slightly. The butter should remain liquid but should not be hot when added to the other ingredients.

Separate 4 large eggs, placing the yolks in a large mixing bowl and the whites in a separate clean bowl. Separating the eggs properly is important for achieving the light texture.

Whisk the egg yolks together with ¾ cup (150 g) of granulated sugar until pale and creamy. Add 2 teaspoons of vanilla extract and the melted butter, mixing until everything is well combined.

Sift ¾ cup (95 g) of all-purpose flour into the mixture. Whisk gently until the flour is incorporated and there are no large lumps.

Gradually add 2 cups (480 ml) of lukewarm milk, whisking continuously. The resulting mixture will be very thin and almost liquid. Don’t worry—this is exactly what you want.

In a clean bowl, beat the egg whites with a small pinch of salt until they form soft peaks. Avoid beating them until they become extremely stiff.

Gently fold the whipped egg whites into the thin custard mixture. Do not overmix. Small pieces of egg-white foam floating in the batter are completely normal.

Pour the batter into the prepared baking dish and place it carefully in the preheated oven. Bake for approximately 50–60 minutes, depending on your oven.

The cake should become beautifully golden on top while the center remains slightly soft and jiggly. Avoid baking it until the center becomes completely firm because the custard layer needs to remain creamy.

Once baked, remove the cake from the oven and allow it to cool completely in the baking dish. For an even better texture, refrigerate it for at least one hour.

Before serving, dust the top generously with powdered sugar. You can also add fresh berries, strawberries, raspberries, or a small amount of whipped cream.

One of the best things about Magic Custard Cake is its texture. The contrast between the light top, creamy custard center, and soft bottom layer makes every slice especially satisfying.

For the best results, use room-temperature eggs and lukewarm milk. These ingredients combine more easily and help create the characteristic layers.

Be careful not to overmix the batter after adding the whipped egg whites. Gentle folding helps preserve enough air to create the delicate upper layer.

Magic Custard Cake is best served chilled or slightly cool. Store leftovers covered in the refrigerator for up to 3 days.

This dessert is perfect for afternoon coffee, family gatherings, holidays, or whenever you want a simple cake with an impressive appearance. One batter, one pan, and a little patience create a truly magical dessert.
