Ingredients
Mashed potatoes: Use 3 cups thick, cooled mashed potatoes. Leftovers work beautifully, provided they are not too loose or creamy.
Eggs: You will need 2 large eggs, lightly beaten. These help bind the mixture and give the puffs structure as they bake.
Cheddar cheese: Measure 1 cup shredded sharp cheddar cheese. Its rich flavor pairs perfectly with the mild potatoes.
Mozzarella cheese: Prepare ¾ cup shredded low-moisture mozzarella, divided. Mix ½ cup into the potatoes and reserve ¼ cup for topping.
Parmesan cheese: Add ¼ cup finely grated Parmesan. It brings savory flavor and helps create golden edges.
Flour: Use 3 tablespoons all-purpose flour to help the puffs hold their shape. If your mashed potatoes are especially stiff, 2 tablespoons may be enough.
Seasonings: Prepare ½ teaspoon garlic powder, ¼ teaspoon onion powder, and ¼ teaspoon black pepper. Add salt to taste, depending on how your potatoes were originally seasoned.
Fresh herbs: Finely chop 2 tablespoons chives or green onions. You can also prepare 1 tablespoon chopped parsley for an optional garnish.
Butter: Melt 2 tablespoons butter for greasing the muffin pan. Coat the bottoms and sides generously to help prevent sticking.
Instructions
Preheat the oven: Set your oven to 400°F (200°C). Position a rack in the middle for even cooking.
Prepare the pan: Brush a standard 12-cup nonstick metal muffin pan with the melted butter. Pay particular attention to the corners and sides.
Check the potatoes: Place the cooled mashed potatoes in a large mixing bowl. Break apart any firm clumps with a fork or spatula.
Adjust the texture: The potatoes should be thick enough to hold a mound on a spoon. Avoid adding milk or cream, which can make the puffs too soft.
Add the eggs: Pour the beaten eggs over the potatoes. Stir until thoroughly combined, scraping the bottom of the bowl.
Add the cheeses: Fold in the cheddar, Parmesan, and ½ cup mozzarella. Distribute the cheese evenly throughout the mixture.
Season the mixture: Add the garlic powder, onion powder, black pepper, and a little salt if needed. Remember that the cheese and prepared potatoes already contain salt.
Add the flour: Sprinkle the flour over the mixture and fold gently until incorporated. Stop once no dry patches remain.
Fold in the herbs: Stir in the chopped chives or green onions. Reserve the parsley for garnishing after baking.
Fill the muffin cups: Divide the mixture evenly among the 12 prepared cups. Fill each approximately three-quarters full, leaving room for a slight rise.
Shape the tops: Gently press the mixture into each cup to eliminate large air pockets. Leave the tops slightly textured for more golden, crisp edges.
Begin baking: Bake for 20–25 minutes, until the edges are golden and the centers look set. The puffs should feel lightly firm when gently touched.
Add the topping: Sprinkle the reserved ¼ cup mozzarella evenly over the puffs. Return the pan to the oven for another 3–5 minutes, until melted and lightly golden.
Rest briefly: Let the puffs rest in the pan for 5–10 minutes. This helps them firm up so they release without falling apart.
Remove carefully: Run a thin silicone spatula around the edges of each puff. Gently lift them out, keeping the browned bottoms intact.
Garnish and serve: Sprinkle with the optional parsley and serve warm. Expect creamy, cheesy centers with golden edges and a modest rise that settles slightly as they cool.
Variation
Garlic Parmesan puffs: Increase the Parmesan to ½ cup and reduce the cheddar to ¾ cup. Add an extra ¼ teaspoon garlic powder for a stronger garlic flavor.
Broccoli cheddar puffs: Fold in ½ cup cooked, finely chopped broccoli. Pat it thoroughly dry before adding so it does not loosen the potato mixture.
Spicy pepper Jack puffs: Replace the cheddar with shredded pepper Jack. Add 1–2 tablespoons finely diced, well-drained jalapeños for extra heat.
Caramelized onion puffs: Fold in ⅓ cup cooled caramelized onions. Chop them finely and drain any excess oil before mixing them into the potatoes.
Smoky turkey bacon puffs: Add ⅓ cup cooked, crisp, chopped turkey bacon. Reduce the added salt to balance its savory flavor.
Mini potato puffs: Divide the mixture into a greased mini muffin pan. Begin checking after 12–15 minutes, adding the cheese topping once the centers have set.
Storage
Refrigerating: Cool the puffs briefly, then refrigerate in a covered container within 2 hours of baking. Store for up to 3 days.
Reheating: Place refrigerated puffs on a baking sheet and warm at 350°F (175°C) for approximately 10–15 minutes, until hot throughout. Oven reheating helps restore their golden edges.
Freezing: Freeze cooled puffs on a tray until firm, then transfer them to a freezer bag or airtight container. Use within 2 months for the best texture.
Reheating from frozen: Arrange frozen puffs on a baking sheet and heat at 350°F (175°C) for approximately 20–25 minutes, until hot throughout. Cover loosely with foil if the tops brown before the centers are heated.
