Easy Cinnamon Sugar Breakfast Puffs (20-Minute Make-Ahead Muffins)
Ingredients
This recipe makes approximately 24 mini breakfast puffs. You’ll need a mini muffin pan and a little extra butter or baking spray for greasing.
Use 1½ cups all-purpose flour, spooned into your measuring cup and leveled.
Add ½ cup granulated sugar for a lightly sweet muffin that pairs well with the cinnamon coating.
You’ll also need 1½ teaspoons baking powder and ¼ teaspoon salt.
For a warm bakery flavor, include ¼ teaspoon ground nutmeg.
Measure ½ cup whole milk, preferably at room temperature.
Use 1 large egg and 1 teaspoon vanilla extract.
Melt ⅓ cup unsalted butter for the batter, then let it cool slightly before mixing.
For the coating, prepare ¼ cup melted unsalted butter, ⅓ cup granulated sugar, and 1½ teaspoons ground cinnamon.
Instructions
Preheat your oven to 400°F (200°C). These mini muffins take approximately 8 minutes to prepare and 10–12 minutes to bake, plus a few minutes for coating.
Lightly grease all 24 wells of a mini muffin pan. Cover the edges around the openings to help prevent sticking.
In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
In a separate bowl, whisk the milk, egg, and vanilla until evenly combined.
Slowly whisk the cooled melted butter into the milk mixture.
Pour the wet ingredients into the bowl of dry ingredients.
Fold gently with a spatula just until no dry flour remains. A few small lumps are perfectly fine.
Avoid beating the batter until completely smooth, which can make the breakfast puffs tough.
Divide the batter evenly among the prepared wells, filling each approximately three-quarters full.
Bake on the center rack for 10–12 minutes, until the tops spring back lightly and a toothpick inserted into the center comes out clean.
Let the puffs rest in the pan for 3 minutes, then carefully transfer them to a wire rack.
Meanwhile, combine the coating sugar and cinnamon in a small bowl. Place the melted coating butter in another bowl.
Brush each warm puff lightly with butter, then roll it in cinnamon sugar. Coat just the tops if you prefer a lighter finish.
Serve warm with coffee, tea, fresh fruit, or yogurt. Their small size makes them easy to add to a breakfast platter.
Variation
Vanilla breakfast puffs: Leave out the nutmeg and increase the vanilla extract to 1½ teaspoons for a simple, buttery flavor.
Apple cinnamon puffs: Fold ½ cup finely diced, peeled apple into the batter. Small pieces cook more evenly; allow a few extra minutes if needed.
Chocolate chip puffs: Add ⅓ cup mini chocolate chips before dividing the batter among the muffin wells.
Orange cinnamon puffs: Stir 1 teaspoon finely grated orange zest into the wet ingredients for a bright citrus flavor.
Cardamom sugar puffs: Replace the nutmeg with ¼ teaspoon ground cardamom and add a small pinch of cardamom to the cinnamon sugar.
Standard-size muffins: Divide the batter among approximately 10 greased standard muffin wells. Bake at 375°F (190°C) for about 16–20 minutes, checking for doneness.
Storage
Let the breakfast puffs cool completely before storing them. Trapping steam inside a container can make the coating damp.
Keep plain or cinnamon-coated puffs in an airtight container at room temperature for up to 2 days. The coating will gradually soften.
For longer storage, refrigerate them in a tightly sealed container for up to 5 days. Warm briefly before serving for a softer texture.
To make ahead, bake the puffs the day before and leave them uncoated. Rewarm, then brush with melted butter and add cinnamon sugar shortly before serving.
Freeze completely cooled, uncoated puffs in a freezer bag for up to 2 months. Remove excess air before sealing and label with the date.
Thaw overnight in the refrigerator or briefly at room temperature. Reheat at 300°F (150°C) for 5–8 minutes, until warmed through, then apply the butter and cinnamon sugar.
