Brown Sugar Bacon-Wrapped Crackers
Ingredients
This recipe makes 24 crackers, enough for approximately 8 appetizer servings.
You’ll need 24 rectangular buttery crackers. Choose sturdy crackers that can hold their shape during baking.
Use 12 slices of thin-cut bacon, cut in half crosswise to make 24 shorter strips.
Measure ½ cup packed light brown sugar for the sweet, caramelized topping.
Add ¼ teaspoon freshly ground black pepper for a little savory warmth.
For an optional spicy kick, use ⅛ teaspoon cayenne pepper. Leave it out for a milder batch.
Have a rimmed baking sheet, aluminum foil, and an oven-safe wire rack ready. Lightly grease the rack to help prevent sticking.
Instructions
Preheat your oven to 300°F (150°C). Slow baking helps the bacon cook through while keeping the crackers from browning too quickly.
Line the rimmed baking sheet with foil to catch the bacon drippings and melted sugar.
Place the lightly greased wire rack inside the baking sheet. Arrange the crackers on a clean work surface.
Cut each bacon slice in half crosswise. If your bacon is especially long, trim the pieces so they wrap around each cracker with a small overlap.
Place one cracker across a strip of bacon, then fold the ends around the middle.
Wrap snugly enough to stay in place without squeezing or breaking the cracker. The bacon will shrink as it cooks.
Set each wrapped cracker seam-side down on the prepared rack.
Repeat with the remaining crackers and bacon, leaving a little space between each piece.
In a small bowl, stir together the brown sugar, black pepper, and optional cayenne.
Sprinkle approximately 1 teaspoon of the sugar mixture over each wrapped cracker, concentrating it on the bacon.
Bake for approximately 45–60 minutes, beginning to check around 40 minutes. Bacon thickness and oven performance can affect the cooking time.
The crackers are ready when the bacon is cooked through, browned, and crisp around the edges, with a bubbling caramelized topping.
Let them rest on the rack for 5–10 minutes. The sugar coating is very hot straight from the oven and firms as it cools.
Carefully loosen the crackers from the rack with a thin spatula. Transfer to a serving platter and serve warm.
Variation
Spicy brown sugar crackers: Increase the cayenne to ¼ teaspoon, or add a pinch of crushed red pepper flakes to the topping.
Maple bacon crackers: Brush the bacon very lightly with pure maple syrup before adding the brown sugar. Avoid soaking the crackers.
Smoky crackers: Mix ¼ teaspoon smoked paprika into the brown sugar for extra smoky flavor.
Black pepper crackers: Increase the black pepper to ½ teaspoon for a bolder sweet and peppery bite.
Parmesan crackers: Sprinkle a little finely grated Parmesan over the crackers during the final 5–10 minutes of baking.
Turkey bacon crackers: Substitute thin turkey bacon, checking earlier because it may cook faster and become drier. The texture will differ from the original version.
Round cracker bites: Use sturdy round buttery crackers instead of rectangular ones. Adjust the bacon strip length to fit without excessive overlap.
Storage
These crackers have the best crunch on the day they are baked. For a gathering, plan to finish them shortly before serving.
Refrigerate leftovers within 2 hours of cooking. Let excess heat escape briefly, then place them in a shallow airtight container.
Store in the refrigerator for up to 3–4 days. Separate stacked layers with parchment paper to reduce sticking.
Reheat on a wire rack over a baking sheet at 300°F (150°C) for approximately 8–12 minutes, until hot throughout. Watch closely so the sugar does not burn.
Avoid microwaving when possible, as it can soften the crackers and make the bacon chewy.
For advance preparation, mix the sugar topping and cut the bacon up to a day ahead. Refrigerate the bacon separately and wrap the crackers shortly before baking.
Freeze cooled, baked crackers in a single layer, then transfer to a freezer container for up to 1 month. Thaw in the refrigerator and reheat in the oven; the crackers may be softer after freezing.
