Ingredients
This recipe makes approximately 2½ cups of dip, enough for 8–10 appetizer servings. Preparation takes about 10 minutes, with optional chilling time afterward.
Use 8 ounces full-fat cream cheese, softened until easy to stir. Block-style cream cheese gives the dip a thick, creamy consistency.
Measure ½ cup sour cream and ¼ cup mayonnaise. Together, they loosen the cream cheese and add a pleasantly tangy flavor.
Shred 1 cup sharp cheddar cheese. Freshly shredded cheddar blends nicely into the dip and gives it a bold cheese flavor.
Finely dice 2 medium fresh jalapeños, removing the stems, seeds, and inner white membranes for a milder result. Reserve a few thin slices for an optional garnish.
Thinly slice 2 green onions, using both the white and green parts. Add 1 tablespoon chopped fresh cilantro if desired.
For seasoning, use ½ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon black pepper, and 1 teaspoon lime juice. Have salt ready to add after tasting.
Instructions
Place the softened cream cheese in a medium mixing bowl. Cut it into smaller pieces first if it is still slightly firm.
Beat with a hand mixer for about 1 minute, or stir firmly with a sturdy spatula, until smooth.
Add the sour cream and mayonnaise. Mix until the base is creamy and evenly combined.
Scrape down the sides and bottom of the bowl to incorporate any remaining cream cheese.
Stir in the garlic powder, onion powder, black pepper, and lime juice.
Wash and dry the jalapeños before cutting them. Avoid touching your eyes while handling them, and wash your hands afterward.
Finely dice the peppers so their flavor spreads evenly throughout the dip. Smaller pieces also make scooping easier.
Fold the diced jalapeños and sliced green onions into the creamy base.
Add the shredded cheddar and optional cilantro. Stir gently until everything is evenly distributed.
Taste the dip with a cracker before adding salt, since the cheese and crackers already contribute saltiness.
Adjust the consistency if needed. For a softer dip, stir in an additional tablespoon of sour cream at a time.
Transfer to a serving bowl or clean glass container. Smooth the surface or leave it loosely swirled for a rustic presentation.
Garnish with the reserved jalapeño slices and a little extra cheddar if desired. Serve immediately, or refrigerate for 30–60 minutes to let the flavors mingle.
Offer with sturdy crackers, tortilla chips, pretzels, cucumber slices, or bell pepper strips. Keep a small spreading knife nearby for delicate crackers.
Variation
Mild cheddar dip: Use just 1 seeded jalapeño, or replace the peppers with ¼ cup finely diced green bell pepper for a version without jalapeño heat.
Extra-spicy dip: Leave some jalapeño membranes in place or add a small pinch of cayenne. Taste gradually, since fresh peppers vary in heat.
Pickled jalapeño dip: Substitute ¼ cup drained, finely chopped pickled jalapeños. Reduce or omit the lime juice until you have tasted the mixture.
Smoky cheddar dip: Replace half the sharp cheddar with smoked cheddar, or stir in ¼ teaspoon smoked paprika.
Ranch jalapeño dip: Add 1–2 teaspoons dry ranch seasoning and omit the added salt initially. Adjust the garlic and onion powders to taste.
Corn and cheddar dip: Fold in ½ cup cooked, cooled corn kernels, thoroughly drained. The corn adds sweetness and extra texture.
Greek yogurt option: Replace the sour cream with plain, full-fat Greek yogurt. The finished dip will taste slightly tangier.
Storage
Transfer leftover dip to an airtight container and refrigerate promptly. Keep it at 40°F (4°C) or below.
For this homemade version with fresh chopped vegetables, use refrigerated leftovers within 3–4 days.
Stir before serving again, as a little liquid may separate during storage. A spoonful of sour cream can help soften an overly firm dip.
For make-ahead preparation, mix the dip up to 1 day before serving. Add the garnish shortly before putting it on the table.
Keep crackers, chips, and vegetables in separate containers. Storing them with the dip will soften crunchy items and add unwanted moisture.
Serve a small portion at a time and replenish from the refrigerator. Discard dip left at room temperature for more than 2 hours, or 1 hour above 90°F (32°C).
Freezing is not recommended because the dairy mixture can become grainy and the fresh vegetables may release water after thawing. Prepare a fresh batch for the best texture.
