Ingredients
Cream cheese: Use 2 packages (8 ounces each) full-fat cream cheese, softened enough to mix easily.
Dried beef: Prepare 1 cup finely chopped, ready-to-eat dried beef, approximately 5 ounces. Divide it between the filling and coating.
Green onions: Thinly slice ¼ cup green onions, using both the white and green parts.
Worcestershire sauce: Measure 1 teaspoon to add savory depth to the cream cheese mixture.
Garlic powder: Use ½ teaspoon garlic powder for a mild garlic flavor without extra moisture.
Onion powder: Add ¼ teaspoon onion powder to complement the fresh green onions.
Black pepper: Prepare ¼ teaspoon freshly ground black pepper. Additional salt usually isn’t necessary because dried beef is salty.
For serving: Have buttery round crackers ready. Add them to the platter shortly before serving to keep them crisp.
Instructions
Soften the cream cheese: Leave it at room temperature for about 30 minutes, just until workable.
Check the beef: Taste a small piece. If particularly salty, briefly rinse it under cold water and pat thoroughly dry.
Chop finely: Cut the dried beef into small pieces so it mixes evenly and is easy to scoop onto crackers.
Divide the beef: Reserve ⅓ cup for the outside coating. Set the remaining ⅔ cup aside for the filling.
Prepare the onions: Wash and thoroughly dry the green onions before slicing them into thin rings.
Beat the cream cheese: Place the softened cream cheese in a mixing bowl and beat until smooth.
Add the seasonings: Mix in the Worcestershire sauce, garlic powder, onion powder, and black pepper.
Fold in the beef: Add the ⅔ cup chopped dried beef and stir until evenly distributed.
Add the green onions: Fold most of the sliced onions into the mixture, reserving a small amount for garnish.
Check the flavor: Taste and adjust the pepper if needed. Keep the mixture thick enough to hold its shape.
Prepare for shaping: Lay a large sheet of plastic wrap on a clean work surface.
Form a mound: Spoon the cheese mixture onto the center of the plastic wrap.
Shape the ball: Gather the wrap around the mixture and gently mold it into a rounded ball.
Chill until firm: Refrigerate for at least 2 hours, or overnight, to firm the cheese and blend the flavors.
Add the coating: Unwrap the chilled cheese ball and gently press the reserved dried beef onto the outside.
Arrange the platter: Place the cheese ball on a serving plate and sprinkle with the reserved green onions.
Serve: Let it soften for 15–20 minutes before serving. Surround with crackers and provide a small spreading knife.
Variation
Cheddar cheese ball: Fold ¾ cup finely shredded sharp cheddar into the filling for a stronger cheese flavor.
Spicy version: Add 1–2 tablespoons finely diced, well-drained pickled jalapeños and a pinch of cayenne.
Crunchy coating: Replace half the reserved coating beef with finely chopped toasted pecans. Cool the nuts before using.
Fresh herb version: Mix in 1 tablespoon chopped parsley or chives for extra freshness.
Mini cheese balls: Shape the mixture into small individual portions, coat lightly with dried beef, and refrigerate until serving.
Storage
Refrigeration: Store tightly wrapped or in an airtight container in the refrigerator for up to 3–4 days.
Make ahead: Prepare the cheese ball 1–2 days ahead. Add the outer coating and fresh garnish closer to serving.
Serving time: Refrigerate within 2 hours of serving, or within 1 hour if the temperature is above 90°F (32°C).
Freezing: For best texture, enjoy fresh. If needed, freeze tightly wrapped without the outer coating for up to 1 month; some graininess may develop.
Thawing and leftovers: Thaw overnight in the refrigerator, then add the coating. Keep leftover crackers separately so they stay crunchy.
