Creamy Vanilla Pudding with Cookie Crumble
Ingredients
Whole milk: Measure 3 cups whole milk for a smooth, creamy pudding base.
Heavy cream: Use ½ cup heavy cream for extra richness.
Granulated sugar: Prepare ½ cup sugar to sweeten the pudding.
Cornstarch: Measure ¼ cup cornstarch to thicken the mixture into a spoonable dessert.
Egg yolks: Use 3 large egg yolks for a rich flavor and pale golden color.
Butter: Prepare 2 tablespoons unsalted butter for the pudding and 3 tablespoons melted butter for the topping.
Vanilla and salt: You need 2 teaspoons vanilla extract and ⅛ teaspoon salt.
Cookie crumbs: Crush enough vanilla wafers or butter cookies to make 1½ cups crumbs, leaving a few small chunks for texture.
Instructions
Prepare the dish: Set aside an approximately 2-quart serving dish. This recipe makes about 8 servings.
Crush the cookies: Place the cookies in a sealed food bag and crush with a rolling pin, or pulse briefly in a food processor.
Make the topping: Mix the cookie crumbs with the 3 tablespoons melted butter until evenly moistened.
Set the crumbs aside: Keep the topping separate while you prepare and chill the pudding.
Combine the dry ingredients: Whisk the sugar, cornstarch, and salt together in a medium saucepan.
Add the yolks: Pour in ½ cup of the measured milk and add the egg yolks. Whisk until completely smooth.
Add the remaining dairy: Gradually whisk in the remaining 2½ cups milk and the heavy cream.
Begin heating: Place the saucepan over medium heat, stirring constantly with a whisk.
Scrape the corners: Run the whisk around the bottom edges of the pan to prevent the pudding from sticking.
Watch for thickening: Continue cooking until the mixture thickens and large bubbles begin breaking through the surface.
Cook briefly: Once bubbling, reduce the heat as needed and cook for 1 minute, whisking continuously.
Finish the pudding: Remove from the heat and stir in the 2 tablespoons butter and vanilla extract.
Check the texture: The pudding should look glossy and smooth. If necessary, press it through a fine-mesh sieve.
Fill the dish: Pour the warm pudding into the serving dish and gently smooth the surface.
Cover the surface: Press food-safe plastic wrap directly against the pudding to prevent a skin from forming.
Chill thoroughly: Refrigerate promptly for at least 4 hours, until cold and set. Avoid placing a very hot glass dish on a cold surface.
Add the crumble: Remove the plastic wrap and scatter the cookie topping evenly over the chilled pudding just before serving.
Spoon and serve: Scoop into small bowls, including both creamy pudding and crunchy crumbs in each portion.
Variation
Banana pudding: Add a layer of freshly sliced bananas over the chilled pudding before adding the cookie crumble.
Chocolate version: Stir 3 ounces finely chopped semisweet chocolate into the hot pudding with the butter.
Lemon vanilla pudding: Add 1 teaspoon finely grated lemon zest with the vanilla for a light citrus flavor.
Cinnamon crumble: Mix ½ teaspoon ground cinnamon into the cookie crumbs before adding the melted butter.
Individual servings: Divide the pudding among 8 small dessert cups, chill, and top each with crumbs before serving.
Storage
Refrigeration: Cover the pudding tightly and refrigerate for up to 3–4 days.
Keep the topping separate: Store the cookie crumble in an airtight container in the refrigerator. Add it shortly before serving for the best crunch.
Make ahead: Prepare the pudding a day ahead and chill overnight. Keep refrigerated until ready to serve.
Freezing: Freezing is not recommended because the pudding can separate and become watery after thawing. Enjoy it chilled for the smoothest texture.
