Homemade apple butter is a smooth, warmly spiced spread made by slowly cooking apples until thick and rich. It tastes wonderful on toast, biscuits, pancakes, and muffins.
Ingredients
Use 5 pounds of apples, peeled, cored, and chopped into roughly equal pieces.
A mixture of sweet and tart apples gives the finished spread a balanced flavor.
Add ¾ cup packed brown sugar for sweetness and a subtle molasses flavor.
Include ¼ cup granulated sugar, adjusting the amount to suit your apples.
Use 2 teaspoons ground cinnamon for that classic, cozy apple butter flavor.
Add ¼ teaspoon ground nutmeg and ¼ teaspoon ground cloves for extra warmth.
Include ¼ teaspoon salt to balance the sweetness and spices.
Reserve 1 tablespoon vanilla extract to stir in after the apples have softened.
Instructions
Wash the apples thoroughly before peeling and preparing them.
Remove the cores and seeds, then chop the apples into similar-sized pieces.
Place the chopped apples in a 6-quart slow cooker.
Sprinkle the brown sugar and granulated sugar over the apples.
Add the cinnamon, nutmeg, cloves, and salt.
Stir everything together so the apples are evenly coated.
Cover the slow cooker and cook on LOW for 8–10 hours.
Check toward the end of cooking. The apples should be very soft and easy to mash.
Stir in the vanilla extract once the apples have softened.
Carefully blend with an immersion blender until smooth, keeping the blade submerged to prevent hot splashes.
Check the consistency. The mixture should be smooth, but it may still need thickening.
If your appliance permits uncovered cooking, cook uncovered on HIGH for another 1–2 hours, stirring occasionally. Otherwise, transfer to a saucepan and simmer gently.
Stop cooking when the apple butter holds a soft mound on a spoon. It will thicken further as it cools.
Spoon into clean, heat-safe containers, leaving some space at the top, and refrigerate promptly.
Variation
For a less sweet version, reduce the sugar and adjust to taste after the apples soften.
For a stronger spice flavor, add a little extra cinnamon near the end of cooking.
For a milder spread, omit the cloves and use only cinnamon and nutmeg.
Replace some of the granulated sugar with maple syrup for a gentle maple flavor.
Add a small amount of ground ginger for a slightly sharper, warming finish.
Use mostly tart apples if you prefer a brighter flavor that balances the sugar.
Leave the mixture slightly textured by mashing the cooked apples instead of blending completely.
For a citrus twist, stir in a little finely grated orange zest near the end of cooking.
Storage
Keep the apple butter refrigerated in clean, tightly covered containers.
Use a clean spoon each time you serve it to help prevent contamination.
For longer storage, freeze in small portions using freezer-safe containers with room for expansion. Thaw in the refrigerator.
