Oklahoma Pecan Nut Squares

Oklahoma pecan nut squares pair a tender, buttery crust with a sweet pecan topping. Each bite brings together crisp nuts, chewy caramel, and delicate shortbread.

These bars make a welcome addition to holiday dessert trays and family gatherings. Their small size also makes them easy to pack and share.

This recipe uses an 8×8-inch baking pan and makes approximately 16 squares. Let them cool completely before slicing so the layers hold together.

Ingredients

Use 1 cup of all-purpose flour for the shortbread base. Measure it by spooning it into the measuring cup and leveling the top.

Add ¼ cup of granulated sugar to sweeten the crust. Its mild sweetness balances the richer topping.

You will need ½ cup of softened unsalted butter for the crust. It should be soft enough to mix easily without being melted.

Include ¼ teaspoon of salt in the crust. This helps bring out the buttery flavor.

For the topping, measure another ½ cup of unsalted butter and ¾ cup of packed light brown sugar. Together, they create a rich caramel base.

Add ⅓ cup of honey and 2 tablespoons of heavy cream. These ingredients help make the topping smooth and chewy.

Measure 1 teaspoon of vanilla extract and another ¼ teaspoon of salt. Stir these into the topping after removing it from the heat.

Prepare 2 cups of roughly chopped pecans. Keep some larger pieces for a topping with plenty of crunch.

Instructions

Preheat your oven to 350°F (175°C). Position a rack near the center for even baking.

Line an 8×8-inch metal baking pan with parchment paper. Leave enough paper hanging over two sides to lift out the cooled bars.

Place the flour, granulated sugar, and crust salt in a mixing bowl. Stir briefly to combine.

Add the softened butter to the dry ingredients. Mix with a fork or your fingertips until moist crumbs form.

Transfer the crumb mixture to the prepared pan. Spread it evenly across the bottom.

Press the mixture firmly into a flat layer. Give the corners and edges extra attention so the crust holds together.

Bake the crust for 18–20 minutes. It should look lightly golden around the edges.

While the crust bakes, place the topping butter, brown sugar, honey, and heavy cream in a medium saucepan.

Warm the mixture over medium heat, stirring as the butter melts. Continue until the ingredients combine smoothly.

Bring the mixture to a gentle boil. Let it bubble for 1 minute, stirring to prevent scorching.

Remove the saucepan from the heat. Carefully stir in the vanilla extract and salt.

Add the chopped pecans and fold until evenly coated. The mixture will be hot and sticky.

Pour the pecan topping over the warm crust. Use a spatula to distribute the nuts evenly.

Return the pan to the oven for 20–25 minutes. The topping should bubble across the surface, including near the center.

Place the pan on a wire rack and allow the bars to cool completely. Refrigerate for approximately 1 hour if you prefer firmer, cleaner slices.

Lift the cooled slab out using the parchment overhang. Cut into 16 squares with a sharp knife, wiping the blade between cuts.

Variation

For a chocolate finish, drizzle melted semisweet chocolate over the cooled bars. Allow the chocolate to set before stacking or serving.

Replace up to half the pecans with chopped walnuts. This adds a slightly different flavor while keeping the crunchy texture.

Add ½ teaspoon of ground cinnamon to the topping for a warm spice note. Stir it in with the vanilla.

Sprinkle a small pinch of flaky sea salt over the finished topping. Apply it while the bars are still warm so it sticks.

Storage

Keep the cooled squares in an airtight container at room temperature for up to 2 days. Choose a cool spot away from sunlight.

For longer storage, refrigerate them for up to 1 week. Separate stacked layers with parchment paper to prevent sticking.

Freeze the squares for up to 3 months in a tightly sealed freezer container. Wrap individual portions for convenient serving.

Thaw frozen squares overnight in the refrigerator. Let chilled bars sit briefly at room temperature before serving for a softer bite.
