White Chocolate Pecan Clusters

Ingredients

12 oz white chocolate melting wafers form the creamy coating. Choose wafers intended for melting and candy making.

2 cups roughly chopped pecans give the clusters their nutty flavor and crunch. Leave some larger pieces for texture.

¼ teaspoon fine salt balances the sweetness of the white chocolate.

⅓ cup dried cranberries, optional, adds a chewy texture and a slightly tart flavor.

Alternatively, use ⅓ cup chopped candied cherries for a festive touch. Pat them dry before adding.

½ teaspoon oil-based vanilla candy flavoring, optional, adds extra vanilla flavor. Avoid water-based extracts, which can cause melted chocolate to seize.

1 teaspoon coconut oil, optional, helps loosen a coating that seems too thick. Adding it may make the finished clusters slightly softer.

2 tablespoons holiday sprinkles, optional, add color to the tops before the coating sets.

Instructions

Line a large baking sheet with parchment paper. Clear enough space for approximately 20–24 small clusters.

Check that your mixing bowl, spoon, and spatula are completely dry. Even a little water can make melted chocolate become thick and grainy.

Roughly chop the pecans into bite-sized pieces. Avoid chopping them too finely.

Place the pecans in a dry skillet over medium-low heat. Spread them into an even layer.

Toast for 4–5 minutes, stirring frequently, until fragrant. Watch closely so they do not burn.

Transfer the toasted pecans to a plate. Let them cool completely before mixing with the chocolate.

Place the white chocolate melting wafers in a microwave-safe bowl. Follow any specific melting directions on the package.

Microwave for 20 seconds, then stir thoroughly. Repeat in short intervals, stirring each time.

Stop heating when only a few small pieces remain. Stir until the remaining pieces melt and the coating becomes smooth.

If needed, stir in the optional coconut oil. Add the optional oil-based vanilla flavoring according to its package directions.

Add the cooled pecans and salt. Fold gently until all the nuts are coated.

Stir in the dried cranberries or thoroughly dried candied cherries, if using. Distribute them evenly throughout the mixture.

Drop heaping tablespoons onto the prepared baking sheet. Leave a little space between each cluster.

Flatten each mound slightly with the back of a spoon to resemble the pictured candies. Add optional sprinkles while the coating is still wet.

Let set at cool room temperature for 30–60 minutes, or refrigerate for 15–20 minutes, until firm. Gently peel the clusters from the parchment.

Variation

Cranberry pecan: Use dried cranberries for a sweet, tart combination that works especially well for holiday candy trays.

Cherry pecan: Add chopped candied cherries for little red flecks throughout the creamy coating.

Mixed nut: Replace half the pecans with chopped almonds, walnuts, or cashews. Keep the total quantity of nuts the same.

Coconut pecan: Replace ½ cup of the pecans with toasted shredded coconut. Cool the coconut completely before adding.

Chocolate drizzle: Once the clusters are firm, drizzle with melted dark or milk chocolate. Let the drizzle set before stacking.

Sweet and salty: Replace ½ cup of the pecans with broken pretzel pieces. Reduce or omit the added salt.

Storage

Room temperature: Store fully set clusters in an airtight container in a cool, dry place for up to 2 weeks.

Separate the layers: Place parchment or wax paper between layers to prevent sticking and protect the tops.

Warm weather: If your kitchen is warm enough to soften the coating, keep the clusters refrigerated.

Refrigeration: Store in a tightly sealed container for up to 3 weeks. Keep away from strongly scented foods.

Freezing: Freeze in an airtight container with parchment between layers for up to 2 months.

Thawing: Thaw inside the closed container in the refrigerator, then bring to room temperature before opening to help limit condensation.
